摘要:利用核磁共振技术得到1H NMR图谱,经分析指认出代县黄酒含有氨基酸、有机酸、碳水化合物、醇类、醛类等30种化学成分。运用多元统计方法,利用主成分分析(PCA)散点图、含量分布图、Heatmap图以及Pearson相关分析,阐明了不同酒龄样品之间化学成分的差异特征及成分稳定性,以此判别代县黄酒的酒龄,为改进生产工艺、优化营养成分以及提高黄酒品质提供科学依据。
Abstract:1H NMR spectra of Daixian wine was studied by nuclear magnetic resonance (NMR) technology, and the components of Daixian wine were found containning 30 chemical components of amino acids, organic acids, carbohydrates, alcohols, aldehydes, etc. By using multivariate statistical method, principal component analysis (PCA) scatter plot, content distribution map, Heatmap and Pearson correlation analysis, the differences and stability of chemical components among samples with different wine ages were clarified. Therefore, the unknown age of rice wine in Daixian was able to be determined, and the scientific basis might be provided for improving the production process, optimizing the nutritional composition and improving the quality of Daixian wine.
